Hey y’all! I’m Mindy, a sarcastic, assimilated PA Yankee living in North Carolina. I was transplanted to the South by way of the Air Force, and the South is home. It took me a long time not to be homesick for Bucks County, PA. But the people here are so darn nice I eventually went full Southern but with a Yankee core – kinda like those hard chocolate candies with the soft chocolate center that your grandma always had in her candy dish.

I’m a mom and my 22 year old son, Juston, is the best kid a parent could have and, when he’s not trying to kill me for the insurance money, parenting him is my greatest joy. We’re almost to the point where I can finally relax and watch him adult. It’s a great accomplishment getting your kids to adult: I’ll let you know how that goes when we get there.

Finally, my sweet and stinky Princess, Daphne, is a different story. She’s a worrisome old gal, but I love her to death. She’ll be 15 in January 2018 and you can’t tell her what to do any longer. Sigh. Aside from that she’s  pretty darn perfect and the best dog ever! Her sister, Sadie, lives with my ex-husband and we share visitation. I miss having her around every day, but love our time together! Meet the crew…

Since I’ve been here for 20 years I’ve dubbed myself a Southernphile (yup, I made that up): a sweet tea drinker, pasta maker, gourmand, amateur photographer and traveler. One day I hope to figure out what I want to be when I grow up, but in the meantime I’m helping to make the world a better place by working to improve recycling in communities across North Carolina. When I’m not at work, which is where I am almost all the time, I’m out and about exploring the land of sweet tea one small town and local restaurant at a time. In my spare time I cook, garden, take photos and occasionally pull out my watercolors. I’d love to share my experiences with you. Come and join me for a spell!

  1. Hey Mindy, seems we have a lot in common! I went to school in Pennsylvania and consider myself a yankee even though I grew up around the world as a Navy Junior. Now we live in North Carolina, so I’m a yankee in the south as well.

      We do seem to have a lot in common! It’s good to meet a fellow Yankee in the land of sweet tea. I’ve lived here so long that NC is really my home, although I’ll always be from Bucks County, PA! I love reading your blog BTW, and the oyster shell clusters are so beautiful.


  2. I just read your piece on Cataloochee via their facebook post. I thoroughly enjoyed it! I am glad you enjoy the South, sometimes folks don’t know what to make of it (or us) but happily that is the exception, not the case. I think I will be a frequent visitor to your blog, it is very entertaining.

      Thank you so much for the compliment! I truly love my adopted state of NC and love nothing more than sharing how wonderful it is here. I think people make a lot of assumptions and don’t try to keep an open mind when they come to visit or live, which makes me sad. North Carolina has so much to offer: great people, delicious food, and beautiful places to visit and I’m trying to see as many places as I can. I hope to hear from you again!
