Hey y’all! I’m Mindy, a sarcastic, assimilated PA Yankee living in North Carolina. I’m a mom to the greatest 22 year old son and furry Princess, Daphne. I’m a southern transplant by way of the Air Force and the south is home.

I’m a Southernphile (yup, I made that up), sweet tea drinker, pasta maker, gourmand, and traveler. One day I to figure out what I want to be when I grow up, but in the meantime I’m helping to make the world a better place by working to better recycling in NC communities. When I’m not at work, which is almost all the time, I’m out and about exploring the land of sweet tea one small town and local restaurant at a time. In my spare time I cook, garden, and occasionally pull out my watercolors. I’d love to share my experiences with you. Come and join me for a spell!

  1. Hey Mindy, seems we have a lot in common! I went to school in Pennsylvania and consider myself a yankee even though I grew up around the world as a Navy Junior. Now we live in North Carolina, so I’m a yankee in the south as well.

      We do seem to have a lot in common! It’s good to meet a fellow Yankee in the land of sweet tea. I’ve lived here so long that NC is really my home, although I’ll always be from Bucks County, PA! I love reading your blog BTW, and the oyster shell clusters are so beautiful.

  2. I just read your piece on Cataloochee via their facebook post. I thoroughly enjoyed it! I am glad you enjoy the South, sometimes folks don’t know what to make of it (or us) but happily that is the exception, not the case. I think I will be a frequent visitor to your blog, it is very entertaining.

      Thank you so much for the compliment! I truly love my adopted state of NC and love nothing more than sharing how wonderful it is here. I think people make a lot of assumptions and don’t try to keep an open mind when they come to visit or live, which makes me sad. North Carolina has so much to offer: great people, delicious food, and beautiful places to visit and I’m trying to see as many places as I can. I hope to hear from you again!
