Sometimes in an effort to save time you go and grab a frozen pizza at the grocery store and go. One of those times I grabbed a BBQ chicken pizza, although I can’t remember the brand. It was tasty, but I quickly realized I could make it better. In order to make it easy on myself, I bought fresh dough from Harris Teeter on a 10 for $10 sale. I froze all but one and got to work. Before we go any further, I want to let you know that this really isn’t a food (with recipe) blog, so much as it’s me sharing my fly-by-the-seat-of-my-pants adventure in making pizza. I’m not big into following recipes (unless baking) and like to be a little more creative and take a lot of liberties with ingredients. So, that said, here we go!

Chicken tenderloins are my preferred type of chicken to cook because they cook quickly and evenly. I cooked and seasoned them with Cavender’s, then chopped to top the pizza. Once I rolled out the dough, I smeared the BBQ sauce (I like Sweet Baby Ray’s Honey BBQ) all over the top. The chopped red onions and chopped cilantro were sprinkled liberally on top of the BBQ sauce. The pizza is taking shape and looking more BBQ chicken pizza-ish!

I like to go heavy on both the cilantro and the onions, for a more bold flavor. Who am I kidding? I like to go heavy with a lot of ingredients, including the cheese! What’s next? Cheese of course! Shredded gouda cheese is added, and there’s no skimping there! I sprinkled one bag of shredded gouda cheese evenly over the onions and cilantro, then topped it with the shredded chicken, and then, wait for it, another bag of shredded gouda!!! One can never have enough cheese!

Are you ready? I popped this baby in the oven at 350 degrees for about 15 minutes, or until the cheese  melted and bubbled. Next? I removed it from the oven. (Note to self – be careful, this pizza is molten hot.) Fresh out of the oven – look at that melty goodness…..I have to tell you, the combination of sweet BBQ sauce combined with the tangy cilantro, onions, savory chicken and creamy gouda is addictive! You can’t eat just one piece! Sometimes you have to take something you like that is easy, such as a frozen pizza and try to make it your own. It may be even better than you think, plus it’s a lot of fun to try. What are you waiting for?! Go experiment with some of your favorites!
